Here, you can witness and taste the centuries-old practice of stone-ground Albanian coffee, a ritual passed down through generations of local women. This isn’t just a drink—it’s a cultural treasure and a living heritage.
At the core of this tradition is the havan, a traditional stone mortar, and a heavy iron or bronze pestle. Together, they are used to crush medium-roasted Arabica coffee beans into an ultra-fine powder, creating what locals call “coffee flour.” The stone plays a critical role in imparting a unique flavor profile, distinct from modern electric grinders. Each grind requires patience, precision, and rhythm—over 800 strikes are needed to achieve the desired texture. When using beans of lesser quality, up to 1,200 rhythmic hits might be necessary, highlighting the dedication and skill involved in this process.
This traditional method of coffee preparation in Gjirokastra offers a richer, more aromatic experience compared to industrial coffee. It’s closely related to Turkish-style coffee, but with its own regional identity. The drink is brewed over heat, not boiled, and sugar is added during the cooking phase rather than afterward. This means you won’t need a spoon—just sip and savor. You can request it bitter (pa sheqer), lightly sweetened (pak sheqer), or very sweet (shumë sheqer), depending on your preference.
